To Prepare The Soy Curls: Preheat the oven to 400℉. Line a baking sheet with parchment paper, spray or brush with oil, and set aside. Mix all the ingredients for the fajita seasoning mix. To rehydrate the soy curls, soak them in a bowl with hot water for about 10 minutes. Drain the water and add the fajita seasoning mix to your soy curls. Place the seasoned soy curls on the prepared baking sheet in a single layer. Bake for 20-25 minutes until golden brown, turning the soy curls over halfway. To Prepare The Fajita Veggies: Heat oil in a large skillet over medium-high heat. Add onions and bell pepper strips, and cook until vegetables are tender and caramelized while stirring frequently, about 5 minutes. Add the baked soy curls in the skillet, stir, and add a squeeze of lime. To serve, place soy curls and the sautéed veggies in tortillas, topped with guacamole, salsa, and sour cream.View original recipe
